Massage meat with Olive Oil Garlic and let stand for 4-24 hours in refrigerator. Mix species and cover the meat with this mixture, wrap in aluminum foil and leave it at room temperature for 2 hours.
Preheat the grill or oven to 250 degrees and cook the meat wrapped in foil for 4 hours. Take off the foil and smoker for 2 hours.
For the smoker use Hickory wood chips or your choice (let these stand in water for 30 minutes to prevent burning)
