450 grams of clean potatoes and halved
1 cucumber sliced
2 tablespoons salt
1 bunch radishes, sliced
1 tablespoon Dijon mustard
2 1/2 tablespoons olive oil oregano
1 teaspoon white wine vinegar
2 teaspoons chopped mixed herbs
(rosemary, dill, mint, cilantro, parsley for example)
Cook potatoes in boiling water with 1 tablespoon of salt until tender and cool.
Meanwhile extend the cucumber slices on a plate and sprinkle with salt. Let stand for 30 minutes. Wash and dry with a paper towel.
Arrange the slices of cucumber and radish in a circle on a plate and pile the cooked potatoes in the center.
Dressing: Mix ingredients and pour over salad that is well covered. Leave it for a while in the fridge before serving.
